gluten intolerant

Recently I was diagnosed to be gluten intolerant.  As a result I have eliminated all wheat products. A gluten-free diet is a diet that excludes the protein gluten. Gluten is found in grains such as wheat, barley, rye and triticale (a cross between wheat and rye).
Initially, following a gluten-free diet may be frustrating. But with time, patience and creativity, I have  found there are many foods that I already eat that are gluten-free and I have found substitutes for gluten-containing foods.

Switching to a gluten-free diet is a big change and, like anything new, it takes some getting used to. I initially felt deprived by the diet's restrictions. However, I tried to stay positive and focus on all the foods that I could eat. I was  pleasantly surprised to realize how many gluten-free products, such as bread and pasta, are now available.

Allowed foods  Many healthy and delicious foods are naturally gluten-free:
  • Beans, seeds, nuts in their natural, unprocessed form
  • Fresh eggs
  • Fresh meats, fish and poultry (not breaded, batter-coated or marinated)
  • Fruits and vegetables
  • Most dairy products
Foods to avoid
  • Beer
  • Breads
  • Cakes and pies
  • Candies
  • Cereals
  • Cookies and crackers
  • Croutons
  • French fries (Not homemade ones)
  • Gravies
  • Imitation meat or seafood
  • Matzo
  • Pastas
  • Processed luncheon meats
  • Salad dressings
  • Sauces, including soy sauce
  • Seasoned rice mixes
  • Seasoned snack foods, such as potato and tortilla chips
  • Self-basting poultry
  • Soups and soup bases
  • Vegetables in sauce

  • I need to say I have experienced a number of good results.  Not only do I feel better I also have put a stop to my fibermialga.  My breathing is better.  I sleep more soundly.  My head is not full of mucus.  Very little drainage. My cravings are under control.   And the list goes on.  I have been gluten free for 6 weeks now.

    rip wrap




     
    The State of Minnesota is allowing shoreline to be reclaimed this year.  This does not come along very often.  There was a ton of paper work to be done. Then a professional rip  wrapper was hired to do the work.   The results were fabulous.  I think that almost 20 feet was reclaimed.  The lake was almost to the yellow cabin.  Top dirt was applied and it was seeded so early next year after the snow leaves new grass will grow.  These are the two lots that my brother owned on Red Lake.  Now the boys own them.  The stones that were added are called rip wrap.  I am hoping that I am right by saying that they are called that because of the  rip tide and wrapping the beach.  I might be wrong but this is my best guess.  The lake is low.  Water from Red Lake is one of the sources of  drinking water for Winnepeg.  The Red Lake property has be in my family for 60 years.

    Homemakers Halloween Party

    I called bingo.  What fun.  I was dressed in my costume.  I came as a couch potato.  The evening was even better that my family came to the party for the first time.  They had dinner of hot dogs and chips.  The kids played games, both won a door prize.  They helped take the pictures that I needed taken. 

    Then the homemakers saved the hall.  While we were there the microwave which was plugged in but not being used started  to smoke.  We unplugged it immediately and it cooled off.  It will be disposed of.  Had we not been there there might have been a fire.

    It was a great Halloween.  My Daughter-in-law texted me that at her last doctors appointmenther measurements indicated that she is starting to dilate.  Yipee.  I'll be a gramma soon.

    Decorating






    This is my homemakers group decorating the Fern Hall for our Halloween party.  We put on a Halloween party for the Becida kids.  We serve hot dogs, chips and cookies. We play bingo all night and there are games for the kids to play with spider rings and mini candy bars for prizes.   I guess I will be calling bingo this year.  Last year I was in the fish pond and missed the entire  party.  I can hardly wait to see all the little tots in their costumes.

    world relief

     
    This picture is of a women in India looking at a quilt.  First Lutheran sends quilts to Lutheran World Relief each year.  I wonder if the gal made her own quilt or is this one of the Lutheran quilts.  It is hard to tell.  We quilt 12 hours a month.  We send anywhere for 60 to 80 quilts a year.  Not  only to World Relief, but we donate quilts to 4 local institutions in Bemidji who help distribute them.  I think that is around 40 quilts to these local institutions. Other quilts that we make goes to heart felt gifts for important people or events.  All the fabrics are donated by our congregation.  We are always in need of sheets for backs to complete these projects.   The knitters also contribute to both causes.  Baby sweaters for world relief are made and afghans for local contributions are made.  This keeps us busy and out of mischief.

    Moving Pastor Cory















    This Saturday 25 members of the First Lutheran congregation gathered to move our pastor to his newly purchased  home.  We had 7 trucks with trailers.  I brought my truck and there was an extra trailer that was dropped off to be used.  We hooked her up and filled it too.  They have a beautiful home in a subdivision North of Bemidji.  They should be very happy in their new home.  What a blessing to get a pastor that we all can enjoy and relate to.
